My Valentines Day Gift

I am posting this to Foodie Friday at Designs by Gollum.

I had the sweetest comment yesterday left by
Jeanette at Starting Over
 If you haven't had the opportunity to meet her yet,

Jeanette has some of the most amazing recipes, ideas
and two of the sweetest dogs I've ever seen!
OOOOh... pigs too!

Anyway, it seems that Jeanette's dear hubby
was asking what I had received for Valentines Day!
So Doug... this one is for you!

My husband, Wayne, made us Chocolate Mousse Cakes!
Here's how...

1 1/4 cups sugar, divided
1/2 cup unsweetened cocoa
2 tablespoons all-purpose flour
1/8 teaspoon salt
3/4 cup water
5 ounces bittersweet chocolate, finely chopped
(we like semi-sweet!)
1 teaspoon vanilla extract
2 large eggs
1 large egg white
Cooking spray

Preheat oven to 350.

Combine 3/4 cup sugar, cocoa, flour, and salt in
a small saucepan.
Add Water, stir well with a whisk.
Bring to a simmer over medium heat,
cook two minutes, stirring constantly.
Pour hot cocoa mixture over chocolate,
stir until chocolate melts.
Stir in vanilla.

Place 1/2 cup sugar, eggs and egg white
in a bowl, beat with a mixer at high speed
for 6 minutes.
Gently fold the egg mixture into chocolate mixture.
Divide chocolate mixture evenly among 10 (4 oz) ramekins
coated with cooking spray.
Place ramekins in a 13 x 9 inch baking pan,
add hot water to pan to a depth of 1 inch.
Bake at 350 for 25 minutes
or until puffy and set.
Serve Warm!
Indulge!
Lick clean!

The real kicker is this recipe is from Cooking Light!
Each serving is only 213 calories or 6.4g of fat!
No kidding!

The whole family enjoyed my Valentine's gift!

Art Work Friday

Nona's Home


Many years ago, we moved my Grandma (Nona)
from her home in Memphis, TN
to a new condo here in Ohio.

Above is a small drawing I did of her home in Memphis.
I remember that home like it was yesterday.
On the front porch were the old metal chairs
and glider similar to these...
I can remember fond memories
of sitting with my Grandpa and Uncle
mesmerized as Grandpa "magically"
 made marbles disappear...
I remember the big tree in the back yard that would
litter Nona's yard with gumballs...
She hated those gumballs!

My memories could go on and on...
As some of you know, Nona has suffered two strokes
over the past year and has been living full time with my parents.
Last week we sold the condo and moved her things out.
Will I miss the condo like I did the house?
I don't think so... for looking back the fond memories
I hold about the old house, all revolved around those I loved.
I am still blessed to have Nona with me...
and I treasure that!

I Passed!

This afternoon I took my online First Aid Course and....
I passed my test!

I must confess that I've been more than a little nervous
about taking this course, but after 3 hours
and taking 7 pages front and back of notes...
I faced my fear and did it! 

I needed to complete this course inorder to apply
for my Ohio Aid Care Worker authorization.

Of course, Wayne thought this was cause for celebration!
And how did we decided to celebrate?
Chicago style pizza at Rosati's Pizza!
The closest thing we've found to real Chicago pizza in Ohio!

This has been another busy week, so I must confess
I've pulled this piece out of the "Art Vault".
Allow me to introduce you to Ken..
Ken was one of my best friends in college.
Really
mohawk and all!
I drew this for an art class portrait assignment.
If you notice the "mat" surrounding the drawing
is actually Ken's profile.
I drew this from a photo.
I wanted to make it special so not only did I sign it
but I had Ken sign it as well.
Ken's is at the top and mine towards the bottom.
(Mine is the DS)
