Roasted Brussels Sprouts with Bacon and Chestnuts



I've seen many recipes floating out in blogland
lately for brussels sprouts.
made a special request that I post my recipe, too.

I received this recipe from a William Sonoma
 techniques class two years ago.
It is now one of the highly requested items
for our family's Thanksgiving meal.

Ingredients

6 oz cooked bacon, diced
5 shallots, minced
4lb. brussels sprouts, halved lengthwise (we quarter ours)
1 cup roughly chopped roasted and peeled chestnuts
2 TBsp chopped fresh thyme
Salt and freshly ground pepper, to taste

Preheat an oven to 425F

In a large roasting pan or oven proof saute pan over medium heat,
cook bacon until crisp, 5 to 8 minutes.

Add the shallots and cook until soft, about 2 minutes.
Increase the heat to medium high, add the brussels sprouts,
chestnuts, thyme, salt and pepper, and stir well.

Transfer the pan to the oven and roast for 15 minutes,
then stir ingredients.
Continue roasting until the brussels sprouts are tender,
about 10 minutes more.

Transfer to a serving dish and serve immediately.
Serves 6

Wonderful!!! I will for sure try this recipe, it looks MUCH more appetizing than mine & I'm desperate for a way to make these lil critters taste good!

I just saved this one. I love brussel sprouts and I keep seeing recipes that mix them with bacon, something I've never done. I'll be trying this one. Thanks!

Do I dare try brussel sprouts?
Even with your delicious looking recipe, I can't. Sorry...
But I will take your word that they taste good.

I'm with Christine on this one. The recipe has some great ingredients in it but I don't think I can get past the brussel sprouts :-) That has been one veggie that I never acquired a taste for. Now...do you have a great recipe for anything with chocolate in it!

Thank you for coming by and for the support. That meant so much to me. I figured everyone would look...get uncomfortable...and click back out.
We have 2 rescue dogs also. We are our black lab's 3rd home in 1 year. She is the best dog I've ever had. Her other homes were nice but they didn't have time for her.
