Anyway, it seems that Jeanette's dear hubby
was asking what I had received for Valentines Day!
So Doug... this one is for you!
My husband, Wayne, made us Chocolate Mousse Cakes!
Here's how...
1 1/4 cups sugar, divided
1/2 cup unsweetened cocoa
2 tablespoons all-purpose flour
1/8 teaspoon salt
3/4 cup water
5 ounces bittersweet chocolate, finely chopped
(we like semi-sweet!)
1 teaspoon vanilla extract
2 large eggs
1 large egg white
Cooking spray
Preheat oven to 350.
Combine 3/4 cup sugar, cocoa, flour, and salt in
a small saucepan.
Add Water, stir well with a whisk.
Bring to a simmer over medium heat,
cook two minutes, stirring constantly.
Pour hot cocoa mixture over chocolate,
stir until chocolate melts.
Stir in vanilla.
Place 1/2 cup sugar, eggs and egg white
in a bowl, beat with a mixer at high speed
for 6 minutes.
Gently fold the egg mixture into chocolate mixture.
Divide chocolate mixture evenly among 10 (4 oz) ramekins
coated with cooking spray.
Place ramekins in a 13 x 9 inch baking pan,
add hot water to pan to a depth of 1 inch.
Bake at 350 for 25 minutes
or until puffy and set.
Serve Warm!

Each serving is only 213 calories or 6.4g of fat!
No kidding!
The whole family enjoyed my Valentine's gift!

Thanks for your notes. I've had lots of eye trouble (iritis), so I've had to stay away from the computer for awhile. We got the cabinets done, and we're planning to install them tonight when my husband gets home from work. Our progress has been slow, but it should start going faster now. I can't wait to share pictures...either today or tomorrow.

My husband doesn't cook. He will grill, or scramble eggs...but, that's it. These look so good and all the best ingredients. I love that vanilla!
